Recipe Serves 6-8


2-3 bags of Ziti noodles (or noodles of your choice)

2 - 8 oz containers of mozzarella cheese

(shred it yourself so it’s fresh)

1 large container of low-fat ricotta cheese

1 bag of fresh spinach, chopped

Fresh basil, freshly diced



2 large cans of tomato sauce

1-2 large cans of diced tomatoes

1 small can of tomato paste

Salt and pepper

Italian seasoning

1 ½ lbs. ground beef

1 ½ lbs. of spicy Italian sausage (cook sliced up or ground)

10-20 cloves of garlic, diced (Gilroy garlic, not the imported)

1 yellow onion, diced

Brown ground beef and sausage, add in diced onion and garlic to sauté with meat. Once meat is cooked ¾ way done, drain excess fat and turn burner to simmer.

Add the tomato cans and season then stir well. Season to taste and simmer for 3-4 hours. The meat will finish cooking in sauce.

After sauce has simmered, boil water and cook noodles ½ recommended time.

Preheat oven to 350f.

Mix well the Ricotta Cheese, ½ - ¾ of the shredded mozzarella cheese, spinach and basil in a bowl.

In a large baking pan mix noodles, ¾ of the sauce and Ricotta cheese mixture. Level out combined ingredients in the pan and top with remaining tomato sauce and shredded mozzarella cheese.

Cover pan loosely with foil and cook at 350f for 50 min and then remove foil for the final 10-15 min.

Serve with your homemade caesar salad as a side.
